  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 pound chicken breasts, boneless and skinless
  • 1 cup white rice
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions:

  1. Set your Instant Pot to sauté mode and heat the olive oil.
  2. Add the chopped onion and minced garlic to the pot. Sauté for about 2 minutes, until the onions are translucent.
  3. Add the chicken breasts to the pot and cook for 5 minutes, until they are browned on all sides.
  4. Remove the chicken from the pot and set it aside.
  5. Add the white rice, chicken broth, dried thyme, paprika, salt, and pepper to the pot. Stir well to combine.
